THE GIESSER ABILITY TO CUT IS BASED ON THE 3 FOLLOWING CRITERIA

1) The Quality of the steel used for the blade.
2) The Accuracy of the hardening and tempering process.
3) The accuracy of the grinding

ALSO THE USER MUST MAINTAIN A GOOD GRIP ON THE KNIFE TO CUT WELL AND SAFELY

 
Raw GIESSER Blades are stamped from Chrome Molybdenum Steel of the highest and most consistent quality available  giesser_knife_blade_stamping
GIESSER Vacuum Hardening - The more even the knife is the better it holds it's edge. This is the reason why GIESSER use the latest high tech vacuum hardening process  giesser_knife_vacuum_hardening
GIESSER Grinding - The initial grind is made by a fully automatic precision process. The second step of the grinding is carried out by a master grinder. The blade is finished by hand in the old fashioned traditional way. The result is far better than that of any machine.  
GIESSER Polishing - The GIESSER Knives polished finish is achieved by machine and ensures a smooth and flawless finish. This gives certain advantages including reduced risk of corrosion caused by such things as food acids.
